      <image:caption>One of the highlights of visiting Schramsberg Vineyards is their renowned Cave Tour. These historic caves, carved into the hillside in the 19th century, provide the ideal environment for aging sparkling wine. As you enter the building, you’re greeted by a small lobby filled with pictures of presidents, bottles from historic moments, and two massive wooden doors. Once you step through the doors, the caves reveal their cool, slightly humid atmosphere, with rows of bottles lining the walls as they go through fermentation and aging. The tour takes you deeper into the caves, where you can see bottles with the sediment from secondary fermentation, the traditional riddling racks (used to hand-turn bottles to gather dead yeast cells at the neck), and images depicting the disgorging process (the removal of those yeast cells). The experience concludes with a tasting of five exquisite sparkling wines in a secluded section of the cave, a perfect way to savor Schramsberg’s craftsmanship.</image:caption>

      <image:caption>The sun rose over a bustling winery as dozens of people in Davis Estates attire set up party tents, bar top tables, umbrellas, and food stations. I applauded them from the nearest pop-up wine bar, a glass of rosé in hand. It was 9 am, and I was the first guest to arrive. The Davis Estates Bud Break party, held every June, celebrates the flower buds breaking on the vine and the start of the grape growing season. Although bud break typically occurs in March or April in Napa, June provides warmer weather, chilled white wines, and freshly bottled rosé. The party featured a wide variety of wines: the classic Davis Estates Chardonnay, their summertime rosé, signature (and limited release) Cabernet Franc, Zephyr (a custom Davis blend), and their 2019 Cabernet Sauvignon. I mostly enjoyed the rosé and Cabernet Franc, my preferred choices, though many guests appreciated the cold Chardonnay on the warm Napa day.</image:caption>

      <image:caption>Officially starting at 10 am, by 9:45, hundreds of people had already arrived, eager to celebrate. The live band finished their warm-ups, tables filled with guests, and every few minutes, another wine bottle "popped." Guests streamed through the barn, collected badges, and snapped photos at the commemorative photo stand. The party featured five different food stations: pizza, Mediterranean, wagyu tacos, poke, and a freshly made mozzarella station. The handmade mozzarella was the standout, with boiling water, fresh bruschetta, and delicious olive oil drizzled on top. The cheese melted in your mouth, perfectly complemented by the crunchy bruschetta. The light rosé, with its subtle tannins and fruity notes, paired perfectly with the mozzarella. The event lasted four hours, with nearly 600 guests attending the celebration, and we couldn't have asked for a better day! The weather was perfect, smiles were abundant, and the wine never ran out.</image:caption>

      <image:caption>On the infamous St. Helena Highway, near Calistoga, sits Sabina Vineyards. Sabina is family-owned, started by David Sabina in 2002 when he moved from Chicago to Napa Valley. For 22 years, David has been making small-production wines. David creates the wines that he loves and shares them with his wine club and visitors.  When we arrived at Sabina Vineyards, we drove up the snaked driveway to the main house. At the top, we parked in the driveway and were greeted by a beautiful stone staircase curving up to the rest of the house, a view of Napa Valley, and a beautiful, giant wooden double door surrounded by vines.  Behind the double doors was the production room, along the walls were tanks for fermentation, and in the back were barrels slowly aging their wine. David walked us through his facility and told us about how Sabina focuses on small production (only 4,000 cases per year), and how he always saves some of his wine to experiment with. We continued the tour to the back room of the production floor to see his personal wine cellar and hear more about the history of Sabina Vineyards.</image:caption>

      <image:caption>The first wine we tasted was the 2023 Sauvignon Blanc. This wine was crisp, fruity, with a touch of minerality, and was perfect for the mid-summer afternoon. Next, we tasted the 2020 Cabernet Sauvignon. Immediately you could feel the full body (heaviness on the tongue) of the Cab. The red fruit notes sang loudly with a hint of vanilla from the barrel aging. Lastly, we tried the 2013 Reserve Estate Cabernet Sauvignon. This wine was my favorite of the three. The soft, velvety feel of the tannins, the balance between fruity and earthy was perfect, and the finish was long and lingering. This wine tasted amazing and, with its long finish, stayed with you to enjoy, even after swallowing.  We sat with David and Ryan for three hours, trying their wines and talking about life. We talked about anything and everything we could possibly come up with. From wine to coffee, careers to retirement, and where wine passions started, all while sitting at a patio on the hillside of Napa, looking at the valley. The sun began to slowly set and we parted ways (after some slightly tipsy group photos). We drove back down the snaked driveway with bellies full of wine and memories to last a lifetime.</image:caption>

      <image:caption>The champagne journey begins in the vineyard, where grapes are hand-picked to specifically pick out the best quality grapes. There are three primary grape varieties used in Champagne:  Chardonnay, Pinot Noir, and Pinot Meunier. Each varietal contributes unique characteristics to the final blend. After harvesting, the grapes are gently pressed to extract the juice, minimizing skin contact to prevent unwanted tannins and colors from leaching into the wine. The extracted juice then undergoes primary fermentation where the yeast converts the natural sugars in the grape juice into alcohol and carbon dioxide. The result is a still wine, known as the "base wine," which is dry and has a high acidity—essential for producing balanced sparkling wine.</image:caption>

      <image:caption>The blended wine is bottled with a mixture of sugar and yeast, known as the "liqueur de tirage." The bottles are then sealed with a crown cap (like a glass beer bottle) and placed in a cool cellar for another fermentation cycle. This fermentation occurs inside the bottle, creating carbon dioxide that dissolves into the wine, forming the bubbles that Champagne is famous for.  Step 4: Aging on the Lees Once secondary fermentation is complete, the wine undergoes an aging period, often lasting several years. During this time, the wine remains in contact with the lees (dead yeast cells) imparting complex flavors and a creamy texture (this is where the “bread” and “doughy” notes come from). The longer the aging, the more pronounced these characteristics become, with some premium Champagnes aging for over a decade.</image:caption>

      <image:caption>After aging, the bottles undergo a process called riddling, or "remuage," to consolidate the yeast particles into the neck of the bottle. Traditionally, this is done by hand, with a skilled riddler gently rotating and tilting the bottles over several weeks.  Step 6: Disgorging (Dégorgement) Once the yeast particles are collected in the neck of the bottle, the necks are frozen. Because of the fermentation inside the bottle, the pressure will be about 70 - 90 PSI. Once the crown cap is removed, this pressure shoots out the frozen yeast like a bullet. Step 7: Dosage Before sealing the bottles with a cork, a small amount of wine and sugar ("liqueur d'expédition") is added. This adjusts the sweetness level, resulting in styles ranging from "Brut Nature" (no added sugar) to "Doux" (sweet). The bottles are then corked and fitted with a wire cage to secure the cork.</image:caption>
